Apricot Jellyroll

New obsession: homemade apricot jam. If you are lucky you can find organic apricots at Costco. Take 2 cups pitted apricots, 2 cups sugar, 1/2 cup water, and put on a low simmer for about 30 minutes until thickened. Refrigerate. So easy. So good. Enjoy with toast. Give some jars away to your friends. Make a jellyroll.
